Il s’agit d’un nouvel appareil pour la cuisson des aliments à basse température . Le cycle de travail de cette nouvelle machine se fait en 2 temps : dans un premier temps l’opérateur règle la température de l’eau dans la cuve (généralement jamais supérieur à 60°), après il règle le temps de cuisson. Il est doté d’une fonction qui lui permet de garder l’eau à bonne température et de l’ajuster si nécessaire en cas de baisse afin que la température dans la cuve soit toujours uniforme, garantissant une cuisson qui donne aux produits une énorme douceur à l’intérieur, l’exaltation des saveurs et une évidente réduction de perte de poids pendant le processus de cuisson.
